2025 Babche Lambrusco Frizzante
Murray Darling Lambrusco grown on red sandy loam and limestone.
A lightly sparkling Rosé. Watermelon rind, first season strawberries. Weighted and moreish.
Based in Timboon in Southwest Victoria, Niki & Tim run a family-operated organic vineyard and farm set along an escarpment of clay and limestone, shaped by the region’s cool climate and maritime influence. They’re in the midst of establishing a densely planted site of Chardonnay, Pinot Noir and Cabernet Franc, all certified organic and guided by biodynamic and permaculture principles.
For the grapes they source from beyond their farm, Niki & Tim choose only Victorian growers they know personally — people farming sustainably, organically, and often biodynamically. Accountability and integrity are central to every bottle they make.
Their winemaking is as hands-on as it gets.
Fruit is handpicked, wild-fermented, manually basket-pressed, and gravity-fed into bottle. Nothing is added. Nothing is taken away. Unfined, unfiltered, and preservative-free — a heartfelt ode to the matriarchs (“the Babches”) in their families who made wine the traditional way: by hand and without compromise.
Niki & Tim don’t chase a style. Instead, they allow each variety and each site to speak for itself, capturing nuance, honesty, and the quiet beauty of where the fruit comes from.
