Mokoan Night Farmhouse Goat, Little Cedar, 100g

“Mokoan Night” is a soft ripened cheese covered with a layer of white, wrinkly mould. The young chevre-style texture begins to forms a ‘gooey’ layer just inside the mould that becomes thicker as the cheese is aged further.

Comté 24 months, Hervé Mons, 150g

Hard / Cow / A.Rennet / Pasteurised / Jura, France

Comté de Gruyère a truly iconic cheese, matured in the Mons maturation tunnel. Each week they are checked, turned and brushed by hand until they reach 24 months of age. The final product has a firm texture and exquisitely complex, almost caramelised nutty characters.

"The first production of this farmhouse style wash rind cheese dates back to the 17th century.

This is often eaten young when It is sweet and delicate but can also be aged to develop a significantly more pungent aroma salty flavour with a rich creamy texture."

Its ivory, creamy white paste with many bluish mottles and velvety texture will delight your senses with hints of undergrowth and its subtle presence when tasted.
